A nice gift for loved ones.

Ingredients for approx. 2 x 250 ml:

  • 2-3 handfuls of touch-me-not (knapweed) blossoms
  • 500 ml Water
  • 1 Lemon
  • AgarAgar or jelling sugar

Preparation:

Shake out the flowers (if there are still small bugs in them – do not wash!), pour the water over them and add the sliced citrine. Leave to stand overnight.

The next morning, bring everything to the boil, strain and boil again with the preserving sugar.

If using agar agar, first allow the liquid to cool, then dissolve the agar agar in it and bring to the boil again.

Now pour everything into clean, sterile preserving jars.

Blüten vom Springkraut

Many people demonise the Indian touch-me-not as invasive – and wrongly so. Not everything that is new and spreading is bad at the same time. Beekeepers, for example, thank God for the emergence of this new plant.
The flowering fruit feeds many a bee colony in our environment, which has become poor in wild plants and contaminated by pesticides and other poisons.
